A bucket of coffee anyone

The new boy is in town at Tim Horton's the coffee bucket has arrived

My question is why do we need such a large cup of coffee. The X-Large is insane now the old XL looks so small next to it.

This is where my In-laws have there cottage. It is just outside Quebec City

Mattis Vacuuming at Cottage in Quebec

Mattis loves to clean. I started Vacuuming for Louise (Mother-in-Law) to help her out and Mattis had to try.

He loves cleaining so for Christmas we got him his own cleaning supplies. Kids cleaning toys that is.

He got a spray bottle a dust pan and a sponge. From Ali who looks after Mattis he got a toy vacuum.

Lazy Chicken Noodless Lasagna

250g corn polenta

1 lb ground chicken

1 large onion

1/2 cup chopped mushrooms

1 large sweet pepper chopped

1 to 1 1/2 cup mozarella cheese grated

italian herb mix to taste

pepper to taste

1 egg

1 Bottle of Classico Tomato Sauce

1 tbsp Oil

Brown Chicken in a sauce pan with the Oil, While browning adding in the chopped Onions, the Chopped Pepper, and the

Italian Herbs.

While the chicken and vegetable mix is cooking grate the Mozarella cheese

Combine the Cottage Cheese, Egg and Pepper in to a medium sized bowl and mix thoroughly

with a fork. You still want the cottage cheese to be lumpy.

When the Chicken and Vegetable mix is cooked, and in the Tomato Sauce and Mix together

In a 9x13 pan place a thin layer of the Tomato Sauce and chicken mixture remove with a small

ladle.

Crumble the polenta over top to create a layer of polenta.

Next Place the Layer of Cottage cheese and egg

Next Place the Layer of Mozarella Cheese

Finally place the remainder of the Tomato and chicken sauce and smooth out evenly

Pre Heat Oven to 375 F

Cook in oven for 30 to 35 Minutes covered with Tin Foil

Let Stand 5 - 10 Minutes before eating

Mattis and his new fish

Mattis found the container we used for cleaning his old fish bowl. He was carrying it around looking for it. We tried putting a toy fish in the container that wouldn't work. So we had to breakdown and get him another fish.

He has a good memory as his last fish died last summer while we were in Kentucky.

He now has a blue Betta named Andy
He feeds him every morning and has to say goodnight to him

Mattis Skating - Jan 22 2012

Mattis Skating on a frozen area of water in an undeveloped area in the subdivision across the road from the House.

He had fun skated for about 15 miutes. He is a good little skater for jsut over 2.

Mattis Claus

Mattis is starting to love christmas
He loves Santa and we have seen the Santa Clause movies too many times to count. He also loves the Grinch and Elf. Anything with Santa is a hit
He will look at a picture point to his head and saw Santa Chapeau he loves to wear the Santa hat as well. He sees all the Santa's everywhere.
Every morning we need to watch something with Santa in it.
It sure brings out the child in me seeing his joy for Santa. I wonder if I got that excited when I was his age. It is like I get to believe in Santa and have the joy of wonder again through new eyes.
Christmas morning should be fun this year.
